Ingredients
Batter
  • 1/2cup all purpose flour
  • 1/2cup milk (or milk alternative)
  • 3 eggs
  • 2tbsp butter (melted)
  • 2tsp sugar or honey
  • 2tsp vanilla
  • 2tsp cinnamon
  • 1/2tsp salt
Apple Mix
  • 2-3 apples, sliced or chopped
  • 2tbsp butter
  • 1tsp sugar
  • 2tsp cinnamon
Instructions
  1. Preheat oven to 425 degrees. Prepare batter by mixing all the dry ingredients together in a medium sized bowl. Whisk the eggs in a separate bowl and mix the wet ingredients with the eggs. Combine the wet and dry ingredients by adding the wet to the dry ingredients. Mix until incorporated and set aside.
  2. Heat up an oven safe skillet, preferably a cast iron skillet to medium heat. Slice the apples and set aside. Put the butter in the skillet and then add the apple slices and coat with the butter. Finish by adding the cinnamon and sugar and toss the apple to coat. Cook the apples for about 3-4 minutes.
  3. While the skillet is hot, evenly spread the apples around the pan and then pour the batter into the skillet. Pop the skillet into the oven and cook for 20-25 minutes. Serve warm and enjoy!
Recipe Notes

Feel free to use any apple that you like. I would recommend something firm that can hold up its shape during the cooking process. I normally combine a granny smith with some type of red apple to have some contrast in texture and taste.
