Hello Hello Hello! It’s snowing here in Colorado this morning, and its beautiful. I love fresh snow, it makes everything look so so pretty. This is the kind of weather that is perfect to stay in and watch some Netflix…oh yeah. That is exactly what I plan on doing today while I stuff my face with this apple cinnamon dutch baby! What is a dutch baby you ask?!
It is basically a large pancake that instead of cooking on the stove top, you cook in the oven. It’s super easy and delicious all at the same time! Also, what I love about dutch baby pancakes is that they are really soft and delicate, more so than what you would get with pancakes you make the traditional way. Annnnd they get really puffy in the oven so they are just really cool to look at.
So…the KC Chiefs lost last night…sigh. I’m not even a big fan of football, but I was excited of the prospect of my hometown team going to the Super Bowl. Oh well, maybe next year.
Today is definitely going to be a lazy day…but I might clean the bathroom, I’m kind of feeling motivated…so strange. I might even head over to one of my favorite coffee shops to do some writing. Did I mention I like snow days? Check out the recipe below and who knows…you might ditch stove top pancakes and go for the Dutch baby instead. Well…maybe just part of the time?

- 1/2 cup all purpose flour
- 1/2 cup milk (or milk alternative)
- 3 eggs
- 2 tbsp butter (melted)
- 2 tsp sugar or honey
- 2 tsp vanilla
- 2 tsp cinnamon
- 1/2 tsp salt
- 2-3 apples, sliced or chopped
- 2 tbsp butter
- 1 tsp sugar
- 2 tsp cinnamon

- Preheat oven to 425 degrees. Prepare batter by mixing all the dry ingredients together in a medium sized bowl. Whisk the eggs in a separate bowl and mix the wet ingredients with the eggs. Combine the wet and dry ingredients by adding the wet to the dry ingredients. Mix until incorporated and set aside.
- Heat up an oven safe skillet, preferably a cast iron skillet to medium heat. Slice the apples and set aside. Put the butter in the skillet and then add the apple slices and coat with the butter. Finish by adding the cinnamon and sugar and toss the apple to coat. Cook the apples for about 3-4 minutes.
- While the skillet is hot, evenly spread the apples around the pan and then pour the batter into the skillet. Pop the skillet into the oven and cook for 20-25 minutes. Serve warm and enjoy!
Feel free to use any apple that you like. I would recommend something firm that can hold up its shape during the cooking process. I normally combine a granny smith with some type of red apple to have some contrast in texture and taste.
